How to Make Irish Potatoes

The first step is to add our 8 oz of cream cheese…yeah get in there. After that, put in 4 oz of butter. Then you can pour in the 2 teaspoons of vanilla extract. It’s time to mix it all together with a mixer of your choice…unless you’re me and need someone better to do it.

Next you’ll have to slowly add in your 8 cups of powdered sugar like so. You’ll start to see that it gets smoother and smoother the more you add in, this is a good sign to keep going.

And then, a tragedy…moving on to mixing with just a fork, this makes the process much longer and harder. But eventually we made it work and got that doughy consistency we were looking for

Now we pour 5 cups of shredded coconuts into our bowl. You can do it in small increments or all at once; we chose to do it all at once, this takes much longer. The coconut packs together the mix, helping it stay in its ball shape, and now that it’s all together, chill it in the freezer for 15 minutes to help pack it in even more.

After 30 minutes, take small pieces and form them into spheres. Once you do that, you can go ahead and roll them in 4 tablespoons of cinnamon. After that you can either chill them for another 15 minutes or you can enjoy this delicious treat right away!
